Rhubarb Pudding Dessert

A delicious, old fashioned pudding cake with a crunchy top and creamy fruit bottom.

There’s something about certain foods that take you back to yester-year, you know what I mean? Rhubarb is one of them. I grew up eating rhubarb right off the plant. We’d crunch on it and enjoy the whole stick. (Although I shudder thinking about it now 😉 We also ate carrots and radishes straight out of the ground, peas and cucumbers off the plant, and raspberries off the bush.

There’s something about home-grown fruits and veggies that make food extra special. We don’t have a garden right now, but we do have a very faithful rhubarb plant. I appreciate every rhubarb dessert my husband bakes, knowing the fruit was grown by us. 🙂

This pudding cake layered with rhubarb on the bottom and a delicious creme brulee topping reminds me of summers gone by. It’s a simple dessert, nothing too, too fancy, but stick-to-your-ribs delicious.

I showed a picture of it on Instagram this week and promised I’d share the recipe on here! I know how much you all absolutely love our Chocolate Rhubarb Brownies and I’m telling you, you’ll love these just as much! Sooo good!

  • Old Fashioned Rhubarb Cake
  • 2 cups rhubarb, chopped
  • 1 1/2 cups sugar, divided
  • 3 tbsp. softened butter
  • 1 tsp. baking powder
  • 1/2 cup milk
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla extract
  • 1 cup flour
  • 1 tbsp. corn starch
  • 2/3 cups boiling water
  1. Layer rhubarb on the bottom of an 9″ square pan.
  2. Mix 34/ cup sugar and the remaining ingredients, except for the boiling water and pour over fruit.
  3. Mix remaining 3/4 sugar and cornstarch and sprinkle over mixture in pan.
  4. Pour boiling water over everything.
  5. Bake at 375F for 45 minutes.
  6. Serves 6-9

We served it warm, topped with vanilla ice cream and everyone was oohing and ahhing.
