Mom’s Banana Muffins

Hello Friends! Hope you are all having a great week. With the cold weather we’ve been having, one of the things I enjoy most, is turning the oven on and baking something. These muffins were the first thing that came to mind today. I have tried many different banana muffin and bread recipes the last few years, but I always keep coming back to this one. It’s Mom’s recipe and somehow, it just tastes like home. And I love that. Hope you enjoy it as well.

Mom's Banana Muffins

Ingredients
  1. 1 cup white sugar
  2. 1/2 cup butter, softened
  3. 1 egg
  4. 1 cup mashed bananas
  5. 1/2 tsp. vanilla
  6. 1 1/2 cups flour
  7. 1 tsp. baking soda
  8. 1 tbsp. hot water
  9. chocolate chips; optional
Instructions
  1. Preheat oven to 350F.
  2. Cream sugar, butter and eggs with electric beater until mixed.
  3. Add banans and vanilla and mix just until blended.
  4. Dissolve baking soda in hot water.
  5. Add flour and baking soda mixture and beat just until mixed.
  6. Bake at 350F for 25minutes or pick inserted in middle comes out clean.
Notes
  1. Freezes well.

*1/2 tsp vanilla

*1 1/2 cups flour

* 1 tsp baking soda

* 1 tbsp. hot water

* chocolate chips, optional
